My Well Worn Apron: What's Coming From My Kitchen Tonight

Well tonight we are almost out of anything and everything in our house.  So I am looking to the freezer for meat, the pantry for grains, and my fridge is pretty empty.  Grocery will be a must for my dh :)   Here is what I am planning for tonight. 

This of course all depends on how much energy I have to do the soup and quinoa after B. gets home :)

Fresh Young Chicken: I prefer the Pioneer Woman's recipe, but it's Monday, so I'm going the easy route and just tossing the chicken in my trusty crock pot.    Dousing it with garlic powder (I'm that lazy, no fresh garlic for us!:)), black pepper, basil, rosemary, and plenty of Kosher salt. I also stuffed it with some white onion.   In crock for the next 6 hours.. pretty simple!

Gazpacho: It's a little cold for this chilled soup today... but hey it's healthy and easy. This is the recipe from the family I lived with in Spain. I always edit it a bit while making it but can't remember exactly what I do.... all of my instructions I wrote in Spanish a decade ago...and I have since lost some of brain cells :)   So here is my "recipe"  

  • 6 fat tomatoes cut up
  • 2-3 garlic cloves
  • 3 pieces of bread torn up
  • 3 medium carrots
  • salt (quite a bit)
  • A little bit of olive oil (my notes say "similar to the amount you would put on a salad")
  • Red Wine vinegar (same amount as olive oil)
  • 1/2 liter (how much is that again?) of cold water

Blend all together, refrigerate and serve cool.  MY blender is broken so I'm going to use my food processor...I THINK that will work :)

Quinoa:   I haven't had too much experience with quinoa, but here is what I am planning: I am going to stir fry in olive oil: some onions (maybe scallions?), garlic, and a yellow bell pepper.  Then I'm going to cook the quinoa and toss it with some sweet basil and the veggies.  This is pretty much the recipe on the back of the Trader Joe's box LOL :)
 

And whalla an easy, fresh dinner for the fam... Happy Cooking!

Humbled by Our Blessings

I am attending the CAPE convention this weekend (Christian Association of Parent Educators).    It is surprisingly inspiring and uplifting to be surrounded by so many like minded families.   I take great joy in seeing well rounded, wholesome, and polite teenagers walking around helping as volunteers.   It reminds me that we aren't necessarily leading our children down a road of being socially awkward and strange.  There are so many talented, wonderful children out there.    I left the convention last night feeling exceedingly blessed to be able to school our children at home.
