My Well Worn Apron: What's Coming From My Kitchen Tonight

Well tonight we are almost out of anything and everything in our house.  So I am looking to the freezer for meat, the pantry for grains, and my fridge is pretty empty.  Grocery will be a must for my dh :)   Here is what I am planning for tonight. 

This of course all depends on how much energy I have to do the soup and quinoa after B. gets home :)

I am always looking for new, easy recipes.  This week will be a little choatic as it is Aria's birthday and the week of the big CAPE homeschooling convention.  This means I will be gone ALOT this week even into the evenings...which doesn't leave a lot of time for elaborate dinners.  Therefore, I don't know when I'll be cooking what, but I do know that my fridge and freezer are getting too bare to just "whip" stuff up.   So, this is what I have planned for the next few days:

Every week I try to figure out how to cook healthy, easy, and yummy stuff.   I go back and forth between my old favorites and trying new recipes.   Brendan is my food critic (in a good way!).    I usually botch at least one dinner, end up making something fantastic one time a week, and almost always "edit" recipes to make them fit what's in my fridge.  In general, I shoot for a meat, fresh/steamed veggie, and perhaps a rice or bread.    Anyhoo... here is this week's dinner plans: (leave a comment if you want the full recipe)

Brendan gets home from work a little before 5:00 almost every week night.  After greeting the girls and I and giving him time to decompress for a few minutes, it's usually my goal to have dinner on the table between 5:30 and 6:00... So, if nothing goes wrong, here's the what the Johnson household will be having:
